Through this presentation, two dietitians share their experience living off the grid at an eco-village in Ghana, West Africa. They will highlight sustainability practices including energy alternatives for food preparation and electricity, water purification, and the farm to table concept. The presentation will provide viable solutions to consider when developing public health and community initiatives locally and remotely. Additionally, the presentation will encourage dietitians to consider their role in advocating for sustainability practices in food procurement, agriculture, food service systems, and food waste reduction.
